Loaded Baked Potato Salad

Ingredients

  • 4 lbs. russet potatoes
  • 1-2 tbsp. olive oil
  • 3 tbsp. apple cider vinegar
  • 1 c mayo
  • 3 \4 c sour cream
  • 1 tsp. salt and pepper
  • 1 lb. bacon, cooked and chopped
  • 6 green onions, chopped
  • 1 1\2 c cheddar cheese

Preparation

Step 1

Preheat oven to 400 degrees
Pierce potatoes and coat with olive oil and bake for 50-60 minutes
Remove from oven and let cool
Remove the skin and cut potatoes in pieces and place in a lg. bowl, spring kle with apple cider vinegar and let rest for 15-30 minutes
Cook the bacon drain and let cool
Mix the mayo and sour cream then add to the
potatoes, stirin bacon, green onions and cheddar cheese
Refrigerate for 3 Mrs.
