Ingredients

  • 6 tbps (3 oz) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 2 tbsp granulated sugar
  • 1 large egg yolk, at room temp
  • 1 1/2 tsp pure vanilla extract
  • 1 cup all purpose flour
  • 1 1/2 tsp cornstarch
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup semi sweet chocolate chips
  • 2 pt chocolate chip cookie dough ice cream, softened
  • 1/2 cup sliced strawberries
  • 1/4 cup chocolate hazelnut spread

Preparation

Step 1

beat butter with an electric mixer on medium speed until smooth, about 1mins. add both sugars, beat on medium speed until light and fluffy, about 2mins. beat in egg yolk and vanilla.

whisk together flour, cornstarch, baking soda and sea salt; gradually add to butter mixture; beating on low speed until blended after each addition. stir in chocolate chips. cover dough with plastic wrap and refridgerate overnight.

preheat the oven to 350. line a deep dish 9 inch pie plate with foil, with 3 inch coming up the sides to make handles. lightly coat with cooking spray. remove dough from refrigerator. press small pieces of dough evenly into bottom of pie plate to form a crust. cover with parchment paper lightly coated with cooking spray, and weigh down with pie weights or dried beans. bake until golden brown, and set 20 to 25mins, removing parchment and weights after only 15. cool completely on a wire rack, about 1hr. lift crust out of plate, using foil handles. remove crust from foil, and place back in pie plate.

place ice cream in a large bowl, and stir with rubber spatula until spreadable but not melted. spoon into cooled crust, and smooth top. cover with plastic wrap, and freeze for at least 4 hours to harden.

remove pie from freezer just before serving. arrange berries in center of pie. with a spoon or pastry bag, drizzle chocolate hazelnut spread on top.

Cut with a warm serrated knife, and serve immediately
