Asparagus Stuffed Chicken

Ingredients
- 3 chicken breasts
- 1 tbsp. Lemon zest of 1 lemon
- 9-12 stalks asparagus
- 3 \4 c shredded provolone cheese
- 1 1\2 tsp. paprika
- 1 tbsp. chopped fresh rosemary
- 1 tbsp. chopped fresh thyme
- 2 tbsp. butter
- 3 tbsp. lemon juice

Preparation
Step 1
Preheat oven to 400 degrees
Butterfly the chicken in half length wise, leaving intact to create a pocket for stuffing
Season inside chicken with lemon zest, add 3-4 stalks & provolone cheese in the center of each breast & fold over to enclose the filling
Season the outside of chicken with paprika & herbs
Rub the seasoning into the chicken & set aside
Heat a lg. oven safe pan over medium heat & add butter, once hot sear the chicken 3-5 minutes on each side
Cover the pan with foil place in oven & bake until the chicken is coo!ed through, about 15-20 minutes
Remove from oven & allow to rest for a few minutes before serving
If desired add lemon juice to chicken juices in the pan and serve as a sauce
