CHIPOTLE ORANGE CHICKEN

Ingredients

  • 1 tblsp light brown sugar
  • 2 tsp ground chipotle chile
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 lbs small chicken thighs, trimmed of excess skin
  • 2 tblsp olive oil
  • 2 small oranges, cut into quarters
  • 2 green onions, thinly sliced

Step 1

Heat grill on medium. In small bowl, combine brown sugar, chipotle, cumin, garlic powder, onion powder and 1 teaspoon each salt and black pepper. In large bowl or 3 quart baking dish, toss chicken with oil; sprinkle with spice mixture, then rub spices into chicken to coat evenly.

Grill chicken, covered 20-25 minutes or until chicken is cooked (165), turning over once. Grill oranges 5-10 minutes or until grill marks appear. Transfer chicken to serving platter. Squeeze juice from oranges all over chicken. Garnish with green onion.
