APPLE SALAD WITH TOASTED MUSTARD SEEDS AND HERBS

Ingredients

  • 1/2 cup mustard seeds
  • 3/4 cup apple cider vinegar
  • 2 tblsp honey
  • 1 tblsp kosher salt
  • 2 large Pink Lady or Gala apples, cored, very thinly sliced
  • 1/4 cup parsley leaves
  • 2 tblsp chopped fresh chives
  • 2 tblsp apple cider vinegar
  • 2 tblsp olive oil

Step 1

Toast the mustard seeds in a small saucepan over medium heat, shaking pan, until they begin to pop, about 2 minutes. Add cider vinegar, honey and salt and bring to a simmer, swirling occasionally. Cook until pan is almost dry, about 5 minutes. Let cool.

Toss apple slices in small bowl with parsley, chives, cider vinegar, olive oil and 2 tablespoons of the toasted seeds; season with salt and pepper. Serve with remaining mustard seeds alongside.
