Creamy Lemon Parmesan Chicken

Ingredients
- For the chicken:
- 2 lg. Chicken breads
- 2 tbsp. Flour
- 2 tbsps. grated fresh parm. cheese
- 1 tsp. salt
- For the sauce:
- 1 tbsp. olive oil
- 2 tsps. butter
- 2 tbsps. minced garlic
- 1 1\4 c chicken broth
- 1 \2 c milk
- 1 \3 c finely grated parm. cheese
- 2 tbsps. capers
- 1 tsp. cornstarch
- 2-3 tbsps. lemon juice
- 2 tbsps. fresh parsley

Preparation
Step 1
Combine flour and parm. cheese
Season the chicken with salt & pepper, dredge in flour mixture, shake off excess. & set aside
Heat 1 tbsps. of oil& 2 tsps. butter in skillet over medium heat until butter has melted & pan is hot
Fry the chicken until golden brown on each side & cooked through, transfer to a warm plate
Add garlic to the oil in the pan & fry until fragrant(about 1 minute)
Reduce heat to low-medium add broth & milk
Bring the sauce to a boil adding parm. cheese & capers & allow to simmer for about 2 minutes until thicker
Pour in the lemon juice allow to simmer for about 1 minute
Add chicken back
