  • Burger patty:
  • 400 g turkey mince
  • 450 g chicken mince
  • 2 teaspoon chopped fresh parsley
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon dried herbs
  • 1 teaspoon salt
  • 2 tablespoon almond flour
  • 1 egg
  • (cabbage or lettuce leaves to serve)
  • Tricolor salsa:
  • 2 tomatoes
  • 3 x 1/2 coloured peppers (I used orange, red and yellow)
  • 1/2 lemon
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • Guacamole:
  • 2 ripe avocados
  • 1/2 teaspoon white pepper
  • pinch of salt
  • 1/2 lemon

Directions:

In a large mixing bowl, use your hands to mix all the ingredients for the burger patties. Make sure it is all very well mixed together. Heat a small amount of oil (about 1 to 2 tablespoons) in a frying pan. Roll handfuls of the burger patty mince in your hands into a ball, and place in the heated frying pan. Press down with your fingers or a spatula to make a flat patty. Fry on medium until lightly brown on one side, flip and fry until done. Repeat this process for all of the mince, you can fry several burger patties at once. While the burgers are frying, make the salsa: Chop the tomatoes and peppers into small cubes. Place in a bowl, and sprinkle with salt, lemon juice and olive oil. Stir well and allow to sit !and marinate while the burgers are cooking. To make the guacamole: cut the avocados in half and scoop out the flesh into a bowl. Mash the avocado with a fork or a potato masher until smooth. Sprinkle the salt, pepper and lemon juice and mix well. When the burger patties are ready, assemble the burgers. Place a lettuce or cabbage leaf on your place, place one or two burger patties on the leaf, top with guacamole and spoon over a tablespoon or two of salsa per patty. Enjoy whichever way you please – with your hands, rolled up in the lettuce leaf or the standard way with a knife and fork!

PS. This recipe makes about 16 medium sized burger patties. This means that it is the perfect meal to have with friends or family, or to make and then have for lunch the next day – a perfect lunch to take to work or to have on-the-go! A note on the almond flour: the almond flour helps to bind the patties together – I actually used roasted almond flour which gave these patties a beautiful smoky flavour
