GARLIC ROSEMARY AND LEMON OVEN FRIES

Ingredients
- 2 lb Yukon Gold potatoes (5 medium)
- 1 tblsp olive oil
- 1 tblsp minced fresh rosemary leaves
- 2 tsp minced garlic
- 1 tsp minced lemon zest
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper

Step 1
Preheat oven to 425. Line a large rimmed baking sheet with silicone baking mat or parchment paper.
Cut potatoes into ½ inch thick slices; cut slices into ½ inch thick sticks (you should have about 60 fries). Spread fried on prepared baking pan, making sure they do not touch or overlap; spray with nonstick spray. Bake 40 minutes, turning every 10 minutes.
Meanwhile, combine oil, rosemary, garlic, lemon zest, salt and pepper in a small bowl.
Remove fries from oven and sprinkle with herb mixture; toss to coat. Bake fries until aromatic and browned, about 5 minutes longer. Transfer pan to wire rack and cool several minutes. Sprinkle fries with remaining herb mixture in pan before serving.
