Ingredients

  • 1 refrigerated pie crust
  • 1 1/2 tsp packed brown sugar
  • 1 tblsp milk
  • 4 5oz paper or plastic cups or pop molds
  • 1 1/4 cup vanilla ice cream
  • 1 cup apple pie filling
  • 1 tsp pumpkin pie spice (possibly apple pie spice)
  • 4 pop sticks

Step 1

Preheat oven to 450. Line large baking sheet with parchment paper. Let pie crust stand at room temperature 15 minutes.

Roll pie crust onto prepared baking sheet. Prick with fork. Bake 10-12 minutes or until golden brown. Cool completely on baking sheet.

Crumble pie crust. Combine ½ cup crumbs and brown sugar in small bowl; mix well. Discard remaining crumbs or save for future use. Add milk to crumb mixture, mixing and mashing with fork until well blended. Press about 2 tablespoons crumb mixture into each cup, using wet fingers if necessary.

Combine ice cream, pie filling and pie spice in blender or food processor; blend until smooth.

Pour ice cream mixture into cups over crumb base. Cover top of each cup with small piece of foil. Insert sticks through center of foil. Freeze 6 hours or until firm.

To serve, remove foil and peel away paper cups or gently twist frozen pops out of plastic cups.
