Ingredients
- 2/3 cup butter
- 2 cups brown sugar
- 1 egg
- 2 tsp vanilla
- 2 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 1/2 cups grated zucchini
- 1 cup butterscotch chips
Preparation
Step 1
Cook butter in a saucepan over medium heat till it starts to turn golden brown, stirring occasionally. Add the brown sugar. Remove from heat and let cool for 5-10 minutes.
Pour butter/sugar mixture into a mixing bowl. Whisk in the egg and vanilla. Add the dry ingredients and mix together. Stir in the zucchini and chips.
Spread batter in a well greased 9x13" pan. Bake in a preheated 350° oven for about 30 minutes or till the middle is set.
