Ingredients
- 2 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 tablespoon tomato paste
- 3 cloves garlic. minced
- 1 lb ground beef
- kosher salt
- ground pepper
- 1 cup tomato sauce
- 1/3 cup ketchup
- 1 tablespoon brown sugar
- 4 bell peppers, cut lengthwise
- 1 cup shredded monterey cheese
- 1/3 cup beef broth
- chopped green onions
Preparation
Step 1
Preheat oven to 400.
In a large skillet over medium heat, heat oil. Cook onion until soft and translucent. Stir in paste and garlic and cook. Add ground beef, season with salt and pepper; cook 6-8 minutes.
Stir in tomato sauce, ketchup, worcheshire sauce, vinegar, and brown sugar. Simmer until slightly thickened.
To a large baking dish, add peppers. Divide the mixture evenly into 8 peppers halved and top with cheese. Pour beef broth into baking dish and cover with foil.
Bake until peppers are tender, about 45 minutes. Uncover and broil until cheese s golden.
Garnih with green onions.
