Festive Jeweled Rice

Ingredients

  • 1 1/4 C basmati rice
  • 1/3 C red or wild rice
  • 1/2 C dried apricots, chopped
  • 1/4 C almonds, chopped
  • 1/4 C hazlenuts, chopped
  • 1 red chile, seeded and chopped
  • 1 pomegranate, seeded
  • 1 T parsley
  • 1 T mint
  • 2 T white wine vinegar
  • 6 T EVOO
  • salt and pepper

Preparation

Step 1

Cook two types of rice separately according to package directions. Drain, let cool and pour into a large bowl.

Add chopped apricots, nuts chile, pomegranate seeds and herbs to rice and mix together.

Just before serving, season oil with salt and pepper and mix well with rice.
