Ingredients
- 1 1/4 C basmati rice
- 1/3 C red or wild rice
- 1/2 C dried apricots, chopped
- 1/4 C almonds, chopped
- 1/4 C hazlenuts, chopped
- 1 red chile, seeded and chopped
- 1 pomegranate, seeded
- 1 T parsley
- 1 T mint
- 2 T white wine vinegar
- 6 T EVOO
- salt and pepper
Preparation
Step 1
Cook two types of rice separately according to package directions. Drain, let cool and pour into a large bowl.
Add chopped apricots, nuts chile, pomegranate seeds and herbs to rice and mix together.
Just before serving, season oil with salt and pepper and mix well with rice.
