Garlic Panko Salmon

Ingredients
- 518 g salmon fillets
- Salt and ground black pepper
- 1 1/2 tsp Dijon mustard
- 1/2 tsbp honey
- FOR THE GARLIC PANKO
- 2 tablespoons olive oil
- 4-6 cloves garlic, minced, depending on how garlicky you like it
- 3/4 cup gluten-free panko crumbs
- 1 tsp lemon zest
- 1 teaspoon parsley, chopped
- Sea salt and fresh ground black pepper

Step 1
Preheat oven to 440 F degrees.
In a small bowl, mix very well Dijon, honey and garlic using a small whisk.
Place salmon fillets, skin side down, in a greasy baking dish, and spoon mustard mixture over each piece of fish.
Bake for about 13-15 minutes until salmon has cooked through.
While salmon is cooking, in another bowl, toss together panko breadcrumbs, garlic, parsley, lemon zest, salt and pepper.
In a skillet, heat olive over medium heat.
Sauté until lightly toasted. Set aside.
When it is time to serve you just need to transfer the salmon filets to a serving dish and top with garlic panko crumbs.
Serve warm with lemon wedges if desired.
