Balsamic Roasted Veggie & White Bean Pasta

Ingredients

  • For Pasta:
  • Cooking spray
  • 1 tbsp. balsamic vinegar
  • 1 t. dijon mustard
  • 2 garlic cloves, crushed
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 2 tbsp. olive oil
  • 2 c broccoli florets
  • 8 oz sliced mushrooms
  • 1 red bell pepper
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 pint cherry tomatoes
  • 1 red onion
  • 1 \3 c pesto
  • 1 \2 lb. pasta
  • 1-15 oz can cannellini beans, drainedn& rinsed
  • 1 \4 c freshly grated park. cheese
  • Drizzle balsamic vinegar

Preparation

Step 1

Preheat oven to 425 degrees
Spray 2 sheet pans
Mix balsamic vi egar, mustard, garlic Italian seasoning & 1 tsp. salt, add 2 tbsp. Oil & mix until combined
In a lg. bowl ad veggies & dressing until evenly coated, spread veggies out in an even layer on cookie sheet, roast for 30 minutes tossing half way thru
Cook pasta and reserve the water
To assemble: combine the cooked pasta,pesto & beans adding 2 tbsp. reserved water as needed, toss with roasted veggies, & 1\4 c parm cheese
& toss well to coat
Drizzle with balsamic vinegar
