Ingredients
- 4 tsp olive oil
- 4 garlic cloves (do not peel)
- 1 tsp fresh rosemary leaves, or 1/2 tsp dried
- 1 lb. sweet potatoes, peeled and cut into 3/4 in. chunks
- 1/4 cup chicken broth
- 1/2 tsp. salt

Step 1
Preheat oven to 350. In an 8 in. square baking dish, combine the oil, garlic and rosemary. Bake until the oil is hot, about 7 minutes; add the potatoes and stir to coat. Roast, turning the potatoes occasionally, 30 minutes.
Add the broth; cook, turning the potatoes occasionally, until browned and cooked through, about 15 minutes longer. Serve, sprinkled with the salt.
