One-Skillet Chicken with Spinach & Mushrooms

Ingredients

  • 4 skinless, boneless chicken breast halves, cut into 1" pieces
  • salt & pepper
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, drained
  • 1 bag (5 oz) baby spinach
  • 2 cups mushrooms, thinly sliced
  • 1/2 cup parmesan cheese, grated

Preparation

Step 1

1. Season chicken with salt & pepper.

2. Coat skillet with olive oil, and warm over medium-high heat. When hot, add chicken and cook for 5-10 minutes, or until chicken is no longer pink and juices run clear.

3. Remove chicken to plate, covering it to keep warm.

4. Add garlic to pan, cook for 2-3 minutes until fragrant. Add tomatoes, spinach and mushrooms. Cook for 3 minutes, until liquid is reduced by half.

5. Put chicken back in pan and stir. Adjust the seasoning if necessary. Sprinkle with cheese just before serving.
