Ingredients
- 1 lb. large peeled & deveined cooked shrimp
- 1 cup chopped celery
- 1 large carrot - shredded
- 1/2 cup chopped onion
- 2 hard cooked eggs - chopped
- 3/4 cup mayonnaise (or half mayo & half sour cream)
- Salt & pepper to taste
- Lemon juice (squeeze or splash)
- Dill (sprinkle)
Preparation
Step 1
Cut shrimp in half and pat dry.
In a large bowl, gently toss shrimp, celery, carrot, onion, eggs & mayo/sour cream. Season with salt & pepper and splash of lemon juice. Add sprinkle of dill if desired. Chill until ready to serve.
