Easy Stir Fried Beef with Vegetables and Butter

Butter and soy sauce are a great combination that bring out the meaty richness of the meat while emulsifying into a creamy sauce. Cooking the meat first, then removing it from the wok ensures that everything ends up perfectly cooked.

Ingredients

  • 1/2 pound flank steak, sliced (I bought already sliced for stir fry beef at Kroger.)
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 teaspoon low sodium soy sauce plus 2 teaspoons
  • 1 teaspoon plus 3 tablespoons oil
  • 1/2 teaspoon cornstarch
  • Vegetables.cut as you prefer. I used peppers and onions
  • 2 medium cloves of garlic, about 1 teaspoon minced
  • Rice (I sautéed some onions, added brown rice, and used chicken broth) I

Preparation

Step 1

1. Place beef in a large bowl. Add the salt, sugar, soy, cornstarch and 1 teaspoon of oil. Mix well and set aside for 30 minutes or more.
2. Heat 2 tablespoons of oil in a wok on high heat until smoking. Add the beef and cook without moving for 1 minute. Stir and continue cooking until half cooking, maybe one more minute. Remove to a bowl and set aside.
3. Add 1 tablespoon oil in wok over high heat. Add vegetables. Don't add too many or it will be watery. Sautée until done to your liking.
4. Add 2 teaspoons of soy. Stir and add in garlic and butter. Toss with vegetables.
5. Add the beef. Cook until beef is done. I like it medium rare so it doesn't have to be in for long, about 1 minute.

Serve over rice.
