BACON WRAPPED FINGERLING POTATOES

Ingredients

  • 1 lb fingerling potatoes
  • 2 tblsp olive oil
  • 1 tblsp minced fresh thyme
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 lb bacon slices, cut crosswise into halves
  • 1/4 cup chicken broth

Step 1

Toss potatoes with oil, thyme, pepper and paprika in large bowl. Wrap half slice of bacon tightly around each potato.

Heat large skillet over medium heat; add potatoes. Reduce heat to medium-low, cook until lightly browned and bacon has tightened around potatoes. Place potatoes in Crock-Pot slow cooker. Add broth. Cover; cook on High 3 hours.
