GRILLED CORN AND CHIPOTLE BUTTER

Ingredients

  • 1/4 cup butter or margarine, softened
  • 2 tsp chopped fresh cilantro
  • 1 tsp honey
  • 1/4 tsp salt
  • 1 small chipotle chile in adobo sauce (from 7 oz can), seeded, finely chopped
  • 4 ears fresh sweet corn, husks removed, cleaned
  • 1 tlbsp olive oil

Step 1

Heat gas or charcoal grill. In small bowl, mix butter, cilantro, honey, salt, chipotle chile and adobo sauce; set aside.

Brush corn with 1 tablespoon oil. Carefully brush oil on grill rack. Place corn on grill over medium-high heat. Cover grill; cook 10-12 minute, turning occasionally, until corn is tender. Serve corn with butter mixture.
