Ingredients
- 1 1 1 cup quinoa
- 1 1 1 tablespoon olive oil
- 1 1 1 tomato, chopped
- 1 1 1 tablespoon chopped green onion (optional)
- 6 6 6 eggs, lightly beaten
- 1/4 1/4 1/4 cup crumbled feta cheese (or sub part-skim
- shredded mozzarella)

Preparation
Step 1
Cook quinoa according to package directions.
In a large nonstick skillet, heat olive oil over
medium heat. Add tomato and green onion (if
using); cook 3 minutes or until tomato begin to
soften. Add cooked quinoa; stir to combine. Add
eggs; cook 4 minutes or until eggs are set,
stirring often with a heatproof spatula. Remove
from heat; sprinkle with feta cheese.
