FRESH SPRING ROLLS

This is a very different meal and they are really very tasty If you want to try something different then you may want to give them a try.

Ingredients

  • PEANUT SAUCE:
  • Spring Roll wrappers
  • Shredded head lettuce or leaf lettuce
  • Mint leaves
  • Shredded carrots
  • Sliced cucumber
  • Cilantro
  • Rice noodles, soak in cold water for 10-20 minutes and cook in hot water, drain and let cool
  • Cooked shrimp or use any other cooked meat of your choice
  • Spicy peanut dipping sauce or just Hoisin sauce
  • 1 tsp cooking oil (I Use canola oil)
  • l clove of finely chopped garlic
  • 1/4 cup of Hoisin Sauce (use a good quality brand)
  • 1/4 cup of smooth or chunky peanut butter
  • 1 cup water (or use chicken broth for more flavor)
  • 1 tsp. sesame oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • Siracha chili sauce ( 1 tsp. for beginners, 1 tbsp. for mature audience)
  • Chopped peanuts (optional)

Preparation

Step 1

Take a spring roll wrapper and run under lukewarm water just until flexible, put on the plate and fill it up with cooked noodles,vegi, shrimp an roll it up as you would a burrito.

In a small saucepan, saute garlic until fragrant (be careful not to burn it) add the rest of the ingredients, stir until combined and cook for a few minutes, If the sauce becomes very thick, add more water (little bit at a time) to desired consistency. Remove and transfer to serving bowl, sprinkle with chopped peanuts if desired.
