Ingredients

  • 1 1/2 Cup Sugar
  • 1/3 Cup Cornstarch
  • 1 1/2 Cup Water
  • 3 T. Butter
  • 1/4 Cup Lemon Juice
  • 1 T. Grated Lemon Rind
  • CRUST
  • 1/2 Cup Butter
  • 1 Cup Flour
  • 1/2 Cup Nuts, chopped
  • WHITE FILLING
  • 8 oz. Cream Cheese, softened
  • 1 Cup Powdered Sugar
  • 9 oz. Cool Whip, softened

Preparation

Step 1

1 1/2 Cup Sugar
1/3 Cup Cornstarch
1 1/2 Cup Water
3 T. Butter
1/4 Cup Lemon Juice
1 T. Grated Lemon Rind

Put sugar, cornstarch & water in pan. Cook until thickens and boil 1 min. Remove from heat. Stir in butter, lemon juice & rind. Mix until smooth. Set aside to cool.

CRUST
1/2 Cup Butter
1 Cup Flour
1/2 Cup Nuts, chopped
Press into pie pan, or 11x7 pan, or 13x9 pan. Bake at 350 for 20-25 min.

WHITE FILLING
8 oz. Cream Cheese, softened
1 Cup Powdered Sugar
9 oz. Cool Whip, softened

Mix together and spoon into cooled crust. Spread Lemon Filling on top. Refrigerate.
