Shaved Asparagus Salad with Oranges and Pecorino

Ingredients

  • 1 large bunch of thick asparagus (2 pounds) trimmed
  • 1 1/2 oz chunch of pecorino Romano cheese
  • 3 T fresh orange juice
  • 1 1/2 T snipped chives
  • 1 1/2 t champagne vinegar
  • 1/4 t freshly grated orange zest
  • 1/4 C hazelnut oil
  • 1 1/2 T grapeseed oil
  • S&P
  • 1 navel orange
  • 2 T toasted hazelnuts coarsely chopped

Preparation

Step 1

Using a mandoline set over a large bowl shave the asparagus lengthwise. Shave the pecorino cheese into the same bowl.

Add orange slices, and nuts

Combine the oils, vinegar, orange juice, orange zest, salt and pepper in a small bowl and whisk to form the dressing pour over salad and enjoy.
