Ingredients

  • 1 gallon of cucumbers (sliced very thin)
  • 2 small onions (sliced very thin)
  • 1/2 cup kosher salt
  • 3 quarts ice
  • 4 cups cider vinegar
  • 4 cups sugar
  • 1 1/2 tsp ground turmeric
  • 1 tsp. mustard seeds
  • 1 tsp.celery seed
  • 1/2 tsp. cloves

Preparation

Step 1

Layer 1/4 of each of the ingredients in a pan. Repeat until you have 4 layers. Put heavy plate and then wrap with plastic wrap for 3 hours at room temperature.
Drain cucumbers. In a large pot, mix together cider vinegar, sugar, spices. Bring to a boil then add boil. Simmer gently until color fades(about 10 minutes).
Put in sterile jars, wipe lids, and seal. Place jars in canning pot and boil in water bath for 15 minutes. Let jars cool in water before removing.
