Ingredients

  • 4 oz Boneless, Skinless Chicken breast
  • 1 cup Chicken Stock
  • 1 Green Bell Pepper (diced)
  • 1 Red Bell Pepper (diced)
  • 1 cup Corn
  • 2 Green Onion (chopped)
  • 2 Tbsp Lime Juice
  • 2-3 tsp Chili Powder
  • Salt and Pepper to taste
  • 1/2 teaspoon Sugar

Preparation

Step 1

1. Sprinkle some chili powder, salt and sugar on to the chicken. Grill the chicken until both sides are browned.

2. In a skillet, add in the soup stock, chili powder, salt, pepper, sugar, lime juice, corn, green/red peppers and green onions. Bring to a boil.

3. Simmer for 7 to 10 minutes. Then top off the chicken with this sauce, and serve.
