  • 1 1/2 lb. fish fillets(fresh or frozen)
  • 1 quart boiling water
  • 1 Tbsp. salt
  • 3 eggs beaten
  • 1/3 cup grated Parmesan Cheese
  • 1 Tbsp. chopped parsley
  • 1 clove garlic, finely chopped
  • 1/2 tsp. salt and pepper
  • 1/2 cup dry bread crumbs
  • 6 toasted rolls
  • Tartar sauce (optional)


Servings 6


Step 1

Place fish in boiling, salted water. Cover and return to boiling point. Reduce heat and simmer for 7-10 minutes or until fish is flaky. Drain, remove any skin and bones (if needed). Chill; flake fish with fork.
Combine egg, cheese, parsley, garlic, salt, pepper and fish. Chill. Shape into six (6) burgers and roll into bread crumbs.
Fry in hot oil over moderate heat until golden brown on each side (approx. 3-4 minutes per side).Drain on paper towel. Serve with tartar sauce on a roll.
