Ingredients

  • Optional:
  • 2 cups cooked rice
  • 1 can black beans, rinsed
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 tomato, seeded and chopped
  • 2 cloves garlic, minced
  • 2 T lime juice
  • Olive oil
  • Seasoning
  • Salt
  • Pepper
  • Cumin
  • Adobo seasoning
  • Chili powder
  • Chicken
  • Beef, ground or sliced steak

Preparation

Step 1

Heat some olive oil in a large frying pan.
Add garlic and onions. Stir.
Add some of the seasoning.
When they get fragrant, add green pepper. Stir.
In a couple of minutes, add the tomato and beans.
Add some more seasoning and the lime juice.
Add the rice.
Add more seasoning.
Continue heating and stiring until all flavors blend.
Keep warm in another dish.

If you are adding meat, cut it into bite size pieces (or crumble ground beef) and add to the pan used for the veggies.
Season with the same seasonings.
Cook thoroughly.

Serve with corn chips or tortillas.
