Ingredients

  • Dough:

  • 3

    cups flour

  • 2/3

    cup cold water

  • 1/2

    cup cold butter

  • cubed 1/2 cup shortening

  • 1

    teaspoon salt

  • 1

    egg, lightly beaten

  • Beef Filling:

  • 8

    oz ground beef

  • 1

    russet potato, peeled and diced

  • l large carrot, peeled and diced

  • 1/2

    cup white onion peeled and diced

  • 1/2

    teaspoon butter, chopped

  • 1/2

    teaspoon thyme, rosemary

  • 1/2

    teaspoon kosher salt

Directions

Ina bowl or directly in your food processor, mix flour and salt together before adding in cold cubed butter. Pulse for 10-15 seconds, until mixture is crumbly. With the motor running slowly drizzle 2/3 cup of ice water to form a ball. Once dough is formed, turn it out onto a lightly floured surface to roll in a large rectangle. Wrap in plastic wrap and chill for 30 minutes. Combine beef with potato, carrot, onion, and season generously with salt and pepper, thyme and rosemary. Preheat oven to 400 and line a baking sheet with parchment paper. Remove dough from refrigerator and cut into 6 pieces. Roll in 8 inch squares and fill with beef mixture in the center of dough, then top with a tablespoon of butter. Fold over and seal with a fork. Put on cookie sheet brush with beaten egg. Bake oven to 350 for 20 minutes, or until golden brown. Serve hot.
