Delicious Coconut Pie

This is an easy family recipe from Mom and Granny. It is almost like a coconut custard pie as it is creamier than a chess pie.

Ingredients

  • 3 eggs
  • 1 1/2 cup sugar (I cut the sugar by 1/4 and next time I may take another 1/8 of the sugar out.
  • 1 small can Pet evaporated milk (5oz)
  • 1/2 stick butter
  • 1 Tab. flour
  • Dash of salt
  • 1 cup moist,flaked coconut(small bag of coconut)
  • 1 tea vanilla
  • 1 milk can of water
  • 1 unbaked deep dish pie shell

Preparation

Step 1

Beat eggs, add flour and sugar. Mix together melted butter, salt, milk and water (measured in milk can) and vanilla. Add to egg mixture and mix well with beater. Pour into pie crust, sprinkle coconut over top.

Bake at 350 degrees til set and brown, about 40 minutes.

You will have extra egg mixture. I poured the remainder of the egg mixture into two prepared custard dishes, put some coconut on top and placed them in a pan with water and baked them with the pie.This makes a nice custard dessert.
