Ingredients

  • 1 onion chopped
  • 1/2 lb mushrooms sliced
  • 1 package frozen chopped spinach thawed and drained
  • 3/4 C bread crumbs
  • cooking spray
  • 3 C monterey jack cheese
  • 10 eggs beaten
  • 1 1/2 C 2% milk
  • 3/4 C half and half

Preparation

Step 1

In a frying pan Saute the onion until brown in 2 T butter until brown. Add mushrooms and spinach and cook until the water has been released and evaporated.

Spray the bottom of a 9X13 baking dish with cooking spray, combine the breadcrumbs, sauteed vegetables and cheese in the pan. Combine the eggs, milk and half and half and pour over the top.

Bake at 400 for 1 hour.
