Ingredients
- 3 red onions
- 1 quart beef stock
- .25 cup cognac
- .25 cup red wine
- 2 tblsp butter
- 2 tblsp water mixed w/arrowroot or cornstarch

Preparation
Step 1
saute onions in butter until soft & carmelized about 2 hours
add broth, wine & cognac: bring to boil. skim off foam. thicken w/arrowroot water.
top with croutons & guyere or fontina cheese
