    quart beef stock

  • .25 cup cognac

  • .25 cup red wine

  • 2

    tblsp butter

  • 2

    tblsp water mixed w/arrowroot or cornstarch

Directions

saute onions in butter until soft & carmelized about 2 hours add broth, wine & cognac: bring to boil. skim off foam. thicken w/arrowroot water. top with croutons & guyere or fontina cheese
