Ingredients
- 1 onion chopped
- salt & pepper to taste
- 3 pounds boneless pork chops, trimmed well
- 1 large can green salsa
- cilantro to taste
- minced jalapenos peppers to taste

Preparation
Step 1
Layer chopped onion into bottom of slow cooker. Place pork on top of onions.
Mix salsa, cilantro, & jalapenos & pour over pork.
Cook on low until meat falls apart. Remove pork & shred.
Puree liquid & mix with shredded pork. This will freeze well in smaller batches.
Layer slightly drained pork & a generous amount of shredded Jack Cheese on a large tortilla. Roll up, place seam down on foil lined cookie sheet. Brush tops with melted butter & bake at 425 until tops are light brown (about 10 minutes). Serve with chunky tomato salsa & avocado. This will make several roll ups.
