Murray's Sausage & Peppers

This can be varied quite a bit - just throw in whatever you have around the kitchen. It's good with mushrooms too.

Ingredients

  • 1 lb Italian sausage links
  • 1 sliced red pepper
  • 1 sliced yellow pepper
  • 1-2 sliced yellow onions
  • 1 small can diced tomatoes
  • 1/2 can tomato paste
  • 4-6 cloves of garlic, diced
  • 2 pinches of dried oregano
  • handful of chopped fresh basil
  • couple pours of cheap marsala (around a cup)
  • pinch of red pepper flakes
  • salt & pepper to taste
  • provolone cheese slices
  • Italian bread or sweet rolls.

Preparation

Step 1

Cook sausage in oil until done. remove and slice.

Sweat peppers and onions for around 5-10 minutes. Add oregano, garlic, basil and cook for a few more minutes.

Add everything else, including the sliced sausages, and cover with Marsala. Cook down until it thikens up. Maybe 15-20 minutes on low.

Serve open faced with melted provolone on Italian bread or sweet rolls
