SLOW COOKER CHEDDAR TOPPED BARBEQUE MEAT LOAF

Barbeque Meat Loaf in Slow Cooker

Ingredients

  • 3 large eggs, beaten
  • 3/4 cup old fashioned oats
  • 1 large red pepper, chopped
  • 1 small onion, chopped
  • 1 envelope onion soup mix
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds lean ground beef
  • 1 cup ketchup
  • 2 tablespoon brown sugar
  • 1 tablespoon barbeque sauce
  • 1 cup shredded cheese

Preparation

Step 1

Cut three strips 18x3 heavy duty foil, criss cross strips in bottom of slow cooker. Spray with cooking spray.Combine eggs, oats, peppers, soup mix, garlic, salt and pepper. Add beef, mix thoroughly. Shape into 7 inch round loaf. Place in slow cooker. Cook, covered, on low 3-4 hours or until temperature is 160.

Topping:

Combine ketchup, brown sugar, barbeque and mustard. pour over meat loaf and sprinkle with cheese. Cook, covered o low 15 minutes until cheese melts.
Remove meat loaf with foil strips and serve.
