Ingredients
- 2 pounds loaves French bread, cut into 1/2 inch slices
- 2 T extra-virgin olive oil
- 1 bunch broccoli rabe
- 1 15 oz cannellini beans
- 1 glove garlic, peeled and smashed
- 1 shallot, peeled and roughly chopped
- 2 T fresh oregano leaves
- 8 oz goat cheese
- Kosher salt and black pepper
Preparation
Step 1
Pre-heat 350
Arrange the bread slices in a single layer on a baking sheet and drizzle with olive oil. Transfer to oven and toast until crisp, about 10 minutes. Set aside.
Pre-heat the broiler; position a rack in top third of the oven.
Bring a large pot of water to a boil. Add the broccoli rabe and cook until al dents, 4 to 5 minutes. Drain and rinse with cool water.
Transfer the broccoli rabe to a food processor and add cannellini beans, garlic, shallot, oregano, and salt & pepper to taste. Pulse to roughly chop. Transfer to a bowl, add 2 to 4 T of goat cheese, and bind together with hands.
Top each piece of toast with a heaping T of the beans and green mixture and then with about 2 T of the remaining goat cheese. Broil until the cheese is golden, about 2 minutes. Serve warm.
