Ingredients
- Add :
- 2 1/2 cups warm water
- 2 T. yeast
- Let sit until foamy.
- 1.8 pounds or 6-7 1/2 cups flour-white or wheat
- 2 1/2 tsp. salt
- 2 1/2 tsp. dough enhancer
- scant 1/2 cup potato flakes
- 3.2 T. powdered milk (buttermilk powder can be used)
- Mix. Place in a pitcher:
- 2 T. plus 2 tsp. oil
- 2 1/2 T. honey
- 2 eggs

Step 1
Add flour mixture to the top of yeast. Then add liquids. Mix on speed 1 for 15 minutes. About 5 minutes after starting check to see if it needs more flour or water. Typically it will need more flour, but not water. Dough can be a little sticky, but not much. Once dough has kneaded 15 minutes remove from mixer onto a greased bench. Spray dough with cooking spray and cover with plastic.
Let rise until doubled in size. Smash all the air out of it, portion , shape and let rise until double.

2 loaves plus one small loaf wheat
Bake at 350° for 7 minutes then rotate. Bake for another 7 minutes, rotate. Bake for another 12 minutes, rotate then bake for 15 minutes more.
Regular oven - Rolls for 20-25 minutes. Bread for 40-50 minutes.
This makes good cinnamon bread. Roll 1/2 dough into rectangle. Spray with water and sprinkle cinnamon sugar on top. Roll up and shape into a loaf. This is great sliced and then toasted with butter!
Notes: If using whole wheat flour you can add 1-2 Tb. frozen orange juice concentrate to off set the tanic acid in the wheat.You can also add 1-2 Tb. wheat gluten.
This can be made in a bread machine. Cut recipe in half and follow machine directions.
