Ingredients
- 2 medium zucchini (~1 lb)
- 1 T extra-virgin olive oil
- 1/2 t thyme
- 1/8 t salt
- 1/8 t black pepper
- pinch red pepper flakes
- 1/3 C grated parmesan cheese
Preparation
Step 1
Heat oven 450
Line baking sheet with foil. Cut Zucchini length wise into quarters, then cut into 2 inch long sticks.
Combine zucchini, oil, thyme, salt, pepper and pepper flakes in a medium bwl and toss to coat.
Place on baking sheet with flesh side down. Roast until just soft and golden, turning so other flesh side is up half way thru (about 15 minutes).
Turn pieces skin side down and sprinkle with cheese. Continue roasting until cheese is melted (about 2 minutes). Serve warm.
