Southwest Cilantro-Lime Salad

Ingredients

  • Dressing:
  • Large head of Romaine lettuce, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 large orange bell pepper, finely chopped
  • 1 pint cherry tomatoes, halved
  • 2 c frozen corn, thawed
  • 5 green onions, sliced
  • 1 c loosely packed cilantro, stems removed and roughly chopped
  • 1/2 avocado, diced
  • Juice of 1 lime
  • 2 garlic cloves
  • 1/4 c olive oil
  • 1-1/2 tsp white wine vinegar
  • 1/8 tsp salt
  • 2 tsp honey

Preparation

Step 1

Puree all dressing ingredients in a food processor or blender until smooth. Taste and adjust seasonings if necessary.

Place salad ingredients in a large bowl and stir to combine.

Toss with homemade Cilantro-Lime Dressing.
