Ingredients
- Dressing:
- Large head of Romaine lettuce, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 large orange bell pepper, finely chopped
- 1 pint cherry tomatoes, halved
- 2 c frozen corn, thawed
- 5 green onions, sliced
- 1 c loosely packed cilantro, stems removed and roughly chopped
- 1/2 avocado, diced
- Juice of 1 lime
- 2 garlic cloves
- 1/4 c olive oil
- 1-1/2 tsp white wine vinegar
- 1/8 tsp salt
- 2 tsp honey
Preparation
Step 1
Puree all dressing ingredients in a food processor or blender until smooth. Taste and adjust seasonings if necessary.
Place salad ingredients in a large bowl and stir to combine.
Toss with homemade Cilantro-Lime Dressing.
