Gluten-Free Pumpkin Dumplings

These dumplings are light and fluffy, and they have a slightly strange flavor. They're pretty good, though.
Ingredients
- 1 15 oz. can of pumpkin
- 1 c. gluten-free flour blend
- 2 large eggs, beaten
- 1 medium onion
- 2 tbsp. olive oil

Step 1
Mix pumpkin, eggs, and flour into a dough.
In a large sauce pan, fry the onions and olive oil for about five minutes, then set aside.
In a large pot, boil water, then shape dumplings with a spoon and slide them in to the water carefully. Let them return to a boil, and when they float, let them simmer for about two minutes.
Remove from the water, place in pan with oil, and once all dumplings have cooked in the water, fry lightly in the oil on medium to medium-high heat and fry for about 3-5 minutes.
Serve. Gravy works well over them.
