Brunswick Stew

Ingredients

  • 1 Whole Roasted Chicken (taken off Bone and shredded with hands into bite size pieces)
  • 2 cans chicken broth
  • 2 cans diced tomatoes (I puree in blender because we like it this way)
  • small onion, chopped
  • 2 cups frozen baby white corn
  • 2 cups frozen tiny lima beans
  • 1 tsp. salt (or to taste – I use about 1 tsp. because of salt in canned broth)
  • 1/2 - 3/4 tsp black pepper
  • dash of Cayenne Pepper
  • 1/2 about 1/2 piece of thick country bacon (I get some at Greene's Meat Market but have seen similar other places)

Preparation

Step 1

I have left bacon out if it don't have it but it makes it better and doesn't take much. I usually roast chickens in oven but think you could use rotisserie chicken as well.
Combine all ingredients. Let come to a boil and then simmer for 1 1/2 - 2 hours
