Enchilada Casserole

Ingredients

  • 1 pound ground beef
  • 1 can (10 ounces) enchilada sauce
  • 1 cup salsa
  • 15 corn tortillas (6 inch)
  • 1 cup frozen corn
  • 1 can black beans, drained and rinsed
  • 16 oz shredded cheese

Preparation

Step 1

Preheat oven to 350. In a large skillet, cook ground beef over medium heat until no longer pink; drain. Stir in enchilada sauce and salsa; set aside. Cumin and chili powder can be sprinkled on the mixture for extra seasoning.

Place 5 tortillas, overlapping as necessary, in the bottom of a greased 13x9-inch baking dish. Cover with one-third of the meat mixture; top with half of the corn and beans; sprinkle with 1 1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. Cheese dip may be substituted for some of the shredded cheese.

Bake, uncovered, 30 minutes or until bubbly.
