VEGETABLE CRACKERS

  • Slice beets, sweet potatoes, plantains or parsnips or all of the above into 1/8-inch disks (a mandoline is helpful) and toss lightly in olive oil.

Preparation

Step 1

Spread the slices on baking sheets, sprinkle with salt, pepper and, if you like, other seasonings and bake at 400 degrees for 10 to 12 minutes.

When browned, flip the chips over and bake for another 10 minutes or so.
