Ingredients

    pkg. cornbread/muffin mix

  • 1

    cup sour cream

  • 1

    cup mayonnaise

  • 1

    envelope ranch dressing mix

  • 3

    large tomatoes

  • ½

    cup red bell pepper, chopped

  • ½

    cup green bell pepper, chopped

  • ½

    cup green onion, chopped

  • 2

    15 ox. cans pinto beans, drained and rinsed

  • 2

    cups cheddar cheese, grated

  • 10

    slices bacon, cooked and crumbled

  • 3

    cups frozen corn, thawed

Directions

Prepare and cook cornbread mix according to directions. crumble cornbread into 8 inch square baking dish. Mix sour cream, mayo and ranch dressing mix. In separate bowl, mix tomatoes, peppers, and onions. in a large glass bowl, layer half of each: cornbread, tomato mixture, cheese, bacon, corn, and dressing. Repeat the layers. Refrigerate 3 ours..
