Red, White and Blue Green Salad

Any proportions of the ingredients may be used. This recipe makes one salad.
Ingredients
- 2 cups mixed salad greens (I used baby spinach.)
- 1/4 cup crumbled feta cheese
- 2 tablespoons candied or toasted walnuts
- 4 strawberries, sliced
- 1/4 cup blueberries
- Raspberry vinaigrette dressing
- 1 cup fresh raspberries
- 1 tablespoon white sugar
- 2/3 cup balsamic vinegar (I used unseasoned rice vinegar, and only used about 1/3 cup.)
- 1/2 cup olive oil (I used light olive oil.)
- 1/2 teaspoon salt
Preparation
Step 1
Lay greens on the plate. Pile on feta and walnuts in the middle of the greens. Scatter the strawberries and blueberries on top. Serve with the dressing on the side, or toss the greens just before you're ready to eat, and pile the goodies on top.
Dressing: Mix raspberries with sugar together in a bowl. Set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture in a bowl and add vinegar and salt. Slowly add the oil, whisking constantly. Put the mixture through a sieve to remove the seeds. (The original recipe called for a tablespoon of honey, but I don't think I added it.).
