Quinoa Salad

Ingredients
- 1 cup quinoa, cooked to package directions
- zest of 1 lime
- juice from 1 lime
- 1 avocado, diced
- 1 cup frozen corn, thawed
- 1 cup cherry tomatoes, halved
- 1/2 tsp onion powder
- sea salt

Step 1
Cook quinoa to package directions and allow to cool. In a large bowl, zest and juice lime. Dice avocado and toss in lime juice. Add in quinoa, corn, onion powder and salt. Fold in tomatoes. Enjoy!
