Ingredients
- 1 pound lean ground beef or chuck
- 16 ounce jar of medium or hot salsa
- 1 package frozen corn
- or 1 can of corn, drained
- 1 1/2 cups water
- 2 teaspoons chili powder
- 1 1/2 cups white medium-grain rice,
- rinsed several times and drained
- 4 ounces ( about 1 cup)
- shredded Monterey Jack cheese
Preparation
Step 1
Brown the burger and drain off grease. Add the salsa, corn, water, chili powder, and rice. Bring to a boil, cover, and simmer 7 minutes, until liquid is absorbed. Fluff the rice, then add the cheese. Cover and let stand until cheese has melted.
