Ingredients

  • 6 hard coconut cookies
  • 1 - 8 ounce package cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1/4 cup brown sugar
  • 1 - 8 ounce can crushed pineapple, well drained
  • 1 teaspoon coconut extract
  • 1 teaspoon rum extract
  • 1 - 8 ounce container Cool Whip, thawed and divided
  • 1/2 cup shredded coconut
  • 6 maraschino cherries with a stem, patted dry
  • 6 candied pineapple pieces
  • 2 Tablespoons toasted coconut

Preparation

Step 1


Place the cookies in a food processor and pulse until they become crumbs. Spoon the crumbs evenly in the bottom of six 5 ounce clear cups. Use a smaller cup or tart shaper to press the crumbs down.
Beat the cream cheese, yogurt, and sugar until creamy. Stir in the extracts, 1 cup Cool Whip, and coconut. Spoon the mixture evenly into the prepared cups.
Spoon the remaining Cool Whip into a large piping bag fitted with tip 1M. Swirl the Cool Whip on top of the cheesecake. Top with the cherry, pineapple, and toasted coconut. Refrigerate until ready to serve.
