Ingredients

    stick melted butter

  • 1

    cup white sugar

  • 2

    eggs

  • 1

    teaspoon vanilla flavoring

  • 2

    cups plain unbleached flour

  • 1

    teaspoon baking soda

  • 3 or 4

    over ripe bananas, mashed

  • Optional: 1/2 to 1 cup chopped black walnuts

Directions

Mash bananas in a large bowl. I use a potato masher. Add butter, sugar, eggs, and vanilla. Beat in flour and soda. Pour into one greased and floured loaf pan. Recipe may be doubled. Bake at 325 degrees for one hour. Do not overbake or the bread will be too dry.
